Sets out a method for determining the total milk
solids content of sweetened condensed milk of normal

partially skimmed or skimmed milk and sucrose only.
This Standard sets out a method for determining the total milk solids content of sweetened condensed milk of normal composition which has been prepared from whole, partially skimmed or skimmed milk and sucrose only.
NOTE: In sweetened condensed milk which has been stored for long periods, part of the original sucrose may alter to form glucose and fructose. The alteration of sucrose interferes with its polarimetric determination. Furthermore, the alteration of sucrose increases the percentage of total solids.
If the presence of altered sucrose is suspected, it will be necessary to determine the original sucrose content before the total milk solids can be calculated. The method for determining the original sucrose level in altered, sweetened condensed milk is described in The Analyst*.
